Parmigiano Reggiano aged 42 months and beyond is for true connoisseurs, intensely releasing aromas of dried fruit, spices, and nutmeg. The flavor is complex and very intense, with a spicy component, while the sweetness is no longer present.
The color becomes an intense straw-yellow with reddish hues. The long aging process makes the cheese drier as it loses moisture, while solubility, friability, and granularity increase.
